Cast Iron Skillet or Oven Proof Pan
5 Small Sweet Potatoes, shredded
1 Large Onion, diced
3 Bell Peppers (I used 3 Different colors), diced
1lb Maple Sausage, crumbled and browned
8oz Cheddar, shredded
6 Eggs, scrambled
6 Cloves Garlic, diced
1Tbs Black Pepper
1tsp Cayenne Pepper
1Tbs Crushed Rosemary
Pre-Heat oven to 350°F. Dice and shred all the vegetables. Heat skillet and brown the sausage. Then add onion, peppers, and garlic. Cook for 5-10 minutes or until peppers and onions are soft.
